Glutamat steht insbesondere in einem Spannungsverhältnis zwischen dem Nutzen für den Verbraucher, der Notwendigkeit für den Lebensmittelhandel und die Lebensmittelhersteller, der Furcht vor der Möglichkeit einer Schädigung der Gesundheit und der Meinung, solche Stoffe seien zum größten Teil schlicht überflüssig. Diese Arbeit gliedert sich konzeptionell in 5 größere Teilbereiche. Der 1. Teil schlägt die Brücke von den Zusatzstoffen im Allgemeinen zum Zusatzstoff Glutamat im Speziellen. Darin wird kurz skizziert, inwiefern Lebensmittelzusatzstoffe in Nahrungsmitteln ihre Anwendung finden (Kap. 2), welche Wendung die Industrialisierung herbeiführte (Kap. 3), mit welchen Mitteln der Geschmack in die industriell verarbeiteten Nahrungsmittel injiziert wird (Kap. 4) u. in welchen Speisen die Glutamate zum Einsatz kommen (Kap ). Im 2. Teil der Arbeit wird der Zusatzstoff Glutamat näher betrachtet. Dabei werden insbesondere die 2 interessanten Aspekte berücksichtigt, welche geschmacklichen und chemischen Eigenschaften der Stoff Glutamat aufweist (Kap. 5). Nachdem intensiver darauf eingegangen wird, wie Glutamat als Neurotransmitter im menschl. Körper wirkt (Kap. 6), schließen sich die Methoden der Produktionsverf. logisch an (Kap. 7). Im 3. Bereich werden die Konsumkompetenz u. die Verbraucherentscheidungen hinterfragt (Kap. 8), um dahin gehend überzuleiten, wie die Industrie mit diesem Hintergrundwissen die Wirkung von Glutamat in Lebensmitteln gezielt einsetzt (Kap. 9) u. welche Vorteile sie daraus zieht (Kap. 10). Der Untersuchung schädl. Nebenwirkungen in Kap. 11 folgen die fragwürdigen Unbedenklichkeitserklärungen internationaler Gremien (Kap. 12). Auf einen Einblick in die Gesetzeslage kann diese Arbeit nicht verzichten, da sowohl eine straflose Umgehung der Deklarationspflicht (Kap. 13), als auch Themen wie Verbraucherschutz und Lebensmittelsicherheit (Kap. 14), Kennzeichnungspflicht und die Zulassung von Lebensmittelzusatzstoffen (Kap. 15) gerade bei der Brisanz des Zusatzstoffes Glutamat im Sinne einer umfassenden Betrachtungsweise angesprochen werden müssen. Der letzte Teil der Arbeit widmet sich den Betrachtungen über Nutzen und Risiken des Zusatzstoffes Glutamat (Kap. 16), bevor abschließend einige grundlegende Empfehlungen für den Verbraucher formuliert werden (Kap. 17).
