Hintergrund Vorteile Viele ernährungsbedingte Krankheiten wie Herzkreislauferkrankungen, Adipositas, Gicht und bestimmte Krebsarten können mit einer gesunden, planzenbasierten Ernährung vorgebeugt werden. Eine Küche bestehend aus planzlichen Produkten ist gut vereinbar mit speziellen Ansprüchen von Gästen mit Lebensmittelallergien, Intoleranzen oder anderen. 1 von 2 Gästen wünscht sich eine planzenbetonte Alternative Die planzliche Küche bietet neue Wege: Backen ohne gesättigte Fettsäuren Erfolgreiche planzliche Küche Die planzenbetonte Küche erlebt zurzeit ein beispielloses Wachstum. Vegetarische Küche liegt im Trend. Konsumenten und Konsumentinnen verlangen gesündere, nachhaltigere und leischreduzierte Gerichte. Köche und Köchinnen erhalten jedoch im Widerspruch zu dieser Entwicklung stehend eine unzureichende Ausbildung in Bezug auf Kompetenzen im vegetarischen Bereich. 2 Kochen ohne Cholesterin Verarbeitung vergessener oder bisher unbekannter Gemüsearten Verwendung von planzlichen Milchprodukten (z.b. bei Laktoseintoleranz) Neue Rezepte und innovative Zubereitungsarten Einen geringen CO2-Fußabdruck Neue Produkte u.a. planzliche Fleisch- und Käseprodukte
Pflanzliche Kuche in der Kochausbildung Fehlende Kompetenzen in der Lehre Die Vegucation-Umfrage im Dezember 2012 zeigte, dass sich nur ein kleiner Teil der Lehrpläne für Chefköche und -köchinnen auf planzenbasierte Produkte beziehen. Dabei gewinnt die vegetarische-vegane Küche bei immer mehr Menschen an Beliebtheit. Im Widerspruch dazu stehend, indet die planzliche Küche ungenügende Berücksichtigung in Aus- und Weiterbildung. Vegucation geht auf die steigende Nachfrage der Gäste ein und gibt eine Antwort auf die veränderten Essgewohnheiten und das Konsumverhalten der Verbraucher und Verbraucherinnen.. Wenn ich im Restaurant eines Freundes esse, dann bestelle ich nur Vegetarisches. Die wahre Stärke des Kochs kommt erst bei vegetarischen Gerichten zum Vorschein Carlo Chantrel (Chefkoch im Restaurant de Zwaan, Etten-Leur) 1 Michelin Star). Fazit Der Trend zur pflanzenbasierten Kost soll auch in der Kochausbildung ankommen. Vegucation entwickelt neue Kompetenzen für die vegetarische Küche, damit Köche in Zukunft besser auf Kundenwünsche eingehen können. 3
ZIELE Vegucation schließt die Lücke zwischen den Anforderungen des Arbeitsmarktes und den derzeitigen Inhalten in der gastronomischen Ausbildung. Das Projekt verfolgt das Ziel, Köche und Köchinnen auf die veränderten Wünsche von Gästen vorzubereiten. Vegucation 1 Gastronomische Expertise... erlaubt Köchen und Köchinnen neue gastronomische Expertise zu entwickeln, die die Anforderungen an moderne, anspruchsvolle vegetarische Gerichte erfüllt. 2 Zielgruppengerechte Lehrmaterialien... bietet zielgruppengerechte Lehrmaterialien für Berufsschulen und für die Zusatzausbildung in Gastronomie und Catering. 3 Unterstützung von Lehrpersonal und Auszubildenden. schult Lehrpersonal und andere Bildungsakteure und -akteurinnen im Umgang mit den bereitgestellten Materialien sowie in der Unterstützung der Lernenden. 4
Pflanzliche Kuche in der Kochausbildung ZIELGRUPPE Vegucation spricht die Gastronomie und das Hotelgewerbe an, darunter Auszubildende sowie Lehrkräfte in der Erst- und Zusatzausbildung. Außerdem involviert Vegucation Entscheidungsträger_innen, Gesetzgeber_innen, Verbände und Wirtschaftskammern. 5

Vegetarian cuisine and education Demand for vegetarian cookery in education Our research showed that only a very few percent of the curriculum in vocational chef training deals with the ield of plant-based products. This is not suficient for a style of cooking which is growing in importance for many people. Vegucation wants to ill this gap in order to meet not only consumers needs, but also to respond to a change in nutrition in consideration of environmental and food shortage issues. If I am eating at a colleague s restaurant, I always order the vegetarian option. The real qualities of a chef become apparent in a vegetarian dish Carlo Chantrel (chef at Restaurant de Zwaan (1 Michelin Star). n conclusio The growing demand for plant-based meals discloses the need for a highly developed education for apprentices, teachers and current chefs. Therefore, Vegucation, a consortium consisting of diferent vegetarian and vegan non-proit-organisations, including several vocational schools, is developing a new syllabus for teaching of vegetarian cuisine. 3
KEY OBJECTIVES Vegucation ills the gap between labour market needs and vocational skills in developing modern qualiication for the new Europe-wide profession as the vegetarian chef. The project addresses the central European concerns by: Vegucation 1 Gastronomic expertise Allowing chefs to develop new gastronomic expertise in order to meet the requirements for modern, sophisticated vegetarian cuisine during the initial and continued training periods. 2 Specialist knowledge Developing resources that provide specialist knowledge. In this context, a learning ield-oriented curriculum, as well as target group-speciic learning material and ICT elements in various language versions will be compiled and accessible on the project s web portal after the project s runtime. 3 Training educational professionals Training educational professionals so that they are able to work with the method as well as to give better assistance to the students by acquiring gastronomic skills. 4
Vegetarian cuisine and education TARGET GROUP In the narrow sense, the project s target group is current and future gastronomy staff, apprentices in gastronomy and the hotel trade as well as teachers and trainers in initial and continuing vocational education and training (VET). In the broadest sense, Vegucation likewise aims at policy makers of VET, chambers and social partners. 5
SERVICES The project will create teaching material and the initial support for their implementation. The different services will be realized in print form as well as encompassing several ICT elements. Vegetarian cuisine and education GET INVOLVED During the project, students, apprentices, teachers and other experts in the gastronomical sector are always welcome to join a feedback team supporting the development of material and courses. During and after the project, every school is invited to play a substantial role as a pilot school and as a cooperating partner implementing Vegucation in their school.
