Während meiner Ausbildung in einem Haus in Bordeaux, dem Château de Suduiraut, musste ich eines Abends für meinen Chef einspringen und hatte versehentlich die Soße, die eigentlich für die Vorspeise gedacht war (Sauternes-Sauce) zum Hauptgericht, dem Wolfsbarsch, gereicht. Ich war in Panik und wusste nicht, was ich machen sollte, als das Gastgeberpaar mir plötzlich sagte, dass die Gäste im Speisesaal nach mir verlangten Dort erwarteten sie mich mit Standing Ovations! Das war nun wahrlich nicht das, was ich erwartet hatte..,: Aber Ende gut, alles gut!
