2 Nel 1990 l imprenditore Ernesto Madeo intraprende una sfida che oggi si è rivelata vincente. Inizia la sua ricerca di alcuni soggetti, maschi e femmine, di Suino Nero di Calabria nelle aree della Sila Greca e dell Aspromonte, per dar vita ad uno degli allevamenti di razza autoctona calabrese più importanti d Italia. Applicando infatti un lungo percorso di selezione, recupera la genetica originaria. Per sua stessa natura, il Suino Nero di Calabria può essere allevato allo stato brado e semibrado. Ha bisogno infatti di ampi spazi dove grufolare liberamente, alla ricerca di olive, erbe e radici che in aggiunta a verdure, mais, orzo e favino prodotti all interno della filiera, costituiscono la fonte di alimentazione. I prodotti si caratterizzano per un alto contenuto proteico e la presenza di Omega 3 ed Omega 6. Al gusto naturale si aggiunge un alta qualità dei processi produttivi, che vengono svolti in maniera artigianale secondo tradizione. Un altro traguardo importante: un brevetto italiano sul processo produttivo e un deposito di modello internazionale per il top di gamma, il Prosciutto di Suino Nero di Calabria. Oggi la Filiera Madeo rappresenta un modello di fare impresa innovativo e sostenibile in Calabria. En 1990 l entrepreneur Ernesto Madeo embrasse un défi qui aujourd hui s est révélé gagnant. Il commence à chercher quelques sujets, mâles et femelles, de Porc Noir de Calabre dans les zones de la Sila Greca et de l Aspromonte, pour créer un des élevages de race autochtone calabraise les plus importants d Italie. En appliquant, en effet, un long parcours de sélection, il récupère la génétique originelle. Pour sa nature, le Porc Noir de Calabre peut être élevé à l état sauvage ou semi-sauvage. Il a en effet besoin de grands espaces où vermiller librement, en cherchant olives, herbes et racines qui sont sa nourriture, avec des légumes, du maïs, de l orge et des féverolles produits par la filière. Les produits se caractérisent pour les hauts contenus de protéines et pour la présence de Oméga 3 et Oméga 6. Au goût naturel, il s ajoute l haute qualité des processus productifs qui se déroulent d une façon artisanale, selon la tradition. Un autre objectif important: un brevet italien sur le processus productif et un dépôt de modèle international pour le top de sa gamme, le Jambon de Porc Noir de Calabre. Aujourd hui la Filière Madeo représente un modèle d entreprise innovant et soutenable en Calabre.

He starts to research some males and females of Black Pig of Calabria in the hills of Greek Sila and Aspromonte, creating one of the most important autochthon race s breeding in Italy. In fact, applying a long route selection, he rediscovers the original genetics. By its very nature, the Black Pig of Calabria can be bred in the wild and semi-wild. In fact needs large spaces to rooting freely in search of olives, herbs and roots that in addition to vegetables, corn, barley and field produced by the supply chain, are the main sources of alimentation. The products are characterized by a high protein content and the presence of Omega 3 and Omega 6. Natural taste adds a high quality of production processes, which are performed in the traditional way according to tradition. Another important goal: an Italian patent on the production process and a deposit of an international model for the top of the range, Prosciutto Black Pig of Calabria. Today the food chain Madeo represents a model of doing business innovative and sustainable in Calabria. Im Jahr 1990 begab sich Madeo einer Herausforderung, die sich heute bewährt hat. Er begann, in den Gebieten der griechischen Sila und Aspromonte, seine Suche nach männlichen und weiblichen Exemplaren des schwarzen Schweins von Kalabrien, um in Italien eine der größten Züchtungen der einheimischen kalabrischen Rasse zu schaffen. Nach einer langen Selektion schafft er es wieder, die genetische Rasse zum Ursprung zu führen. Eine einheimische Rasse, die sich perfekt an das raue Klima Kalabriens angepasst hat. Seiner Natur nach, kann das schwarze Schwein von Kalabrien in totaler Wildnis oder in halbwilder Umgebung gezüchtet werden. Das schwarze Schwein braucht große Flächen um frei nach Oliven, Kräutern und Wurzeln zu wühlen, die die Hauptnahrung ausmachen. Als Nahrungsergänzung bekommt es zusätzlich, aus der Agrarkette, Mais, Gerste und Ackerbohnen. Die Produkte zeichnen sich durch einen hohen Proteingehalt und die Reichhaltigkeit 100% Made in Italy an Omega 3 und Omega 6 aus. Zusätzlich zu dem natürlichen Geschmack garantiert Madeo eine hohe Qualität der Produktionsprozesse, die in der traditionellen Art und Weise durchgeführt werden. Ein wichtiges Ziel hat die Agrar- und Nahrungskette Madeo in den letzten Jahren erreicht: Ein italienisches Patent auf das Herstellungsverfahren von seiner Linie und die Einreichung eines internationalen Modells für sein Spitzenprodukt: Der Schinken vom Schwarzen Schwein aus Kalabrien.
