Gli Armadi ed i Tavoli Fermalievitazione Everlasting bloccano o rallentano l attività fermentativa del lievito, mantengono l impasto in questo stato fino ad un massimo di 72 ore, ed infine iniziano la fase di fermentazione all orario stabilito dal programma. EVERLASTING con la sua gamma di abbattitori King, grazie alla velocissima penetrazione del freddo con temperatura dell aria a -35 /-40 C, garantisce la formazione di cristalli molto piccoli, e più piccoli saranno tali cristalli, tanto migliore sarà la qualità dei prodotti una volta scongelati. Al momento della rigenerazione o della cottura non si avranno perdite di liquidi, di peso, di consistenza, di gusto e si ritroveranno inalterate tutte le qualità iniziali. La surgélation rapide: Avec la congélation rapide à -18 C au cœur du produit, tous les produits crus, semi-finis et cuits peuvent être insérés dans une cellule de surgélation rapide à partir de toute température et produits en plus grandes quantités pour être conservés aussi pour des mois. Grâce à la très vite pénétration du froid à température de l air de -35 /- 40 dans sa gamme de cellules de surgélation rapide King, EVERLASTING garantit la formation de très petits cristaux: les plus petits sont les cristaux, la meilleure sera la qualité des produits une fois décongelés. Au moment de la régénération ou de la cuisson, on n aura pas de pertes de liquides, de poids, de consistance et de goût, et on retrouvera toutes les qualités originales inaltérées.
